Why is the interior design of older cars so much better than new ones?

Maybe it's because everything switched to touchscreens or because the interiors turned into plastic, I don't know, but all new cars look very similar now, there's no soul left. We need buttons, the screen doesn't feel premium. Even if it did, changing something like the AC while driving becomes a nightmare. Do you like this design approach? Why?
